How to Make Cheese Sauce Recipe
My homemade cheese sauce is ultra-creamy, wildly easy, and totally better than anything from a jar. This cheese sauce is creamy, cheesy and easy to make in 5 minutes with only 6 ingredients.
Why this recipe works
Luxuriously creamy and flavor-packed, this homemade Cheddar Cheese Sauce recipe is one that you’ll return to again and again. It’s irresistible drizzled on everything from steamed broccoli to baked potatoes, used to make macaroni and cheese, or enjoyed as a dipping sauce.
Flavor and texture tips
- Sharp Cheddar is My Flavor Secret!
- I prefer using a mixture of sharp cheddar and American cheese for the best flavor and texture.
- Mix It Up! Different cheeses = different vibes.
- Grate it fresh! Bagged cheese might be easy, but it won’t melt like a dream.
- My easy homemade cheese sauce recipe uses simple ingredients and comes together fast-perfect for vegetables, Tater Tot Nachos, or dipping!
- This ingredient (American cheese) makes this recipe taste like the sauces you get at your favorite fast food restaurants.
Ingredients (makes roughly 2 cups)
- 2 tablespoons unsalted butter (in a medium-sized sauce pan, add 2 tablespoons unsalted butter)
- 2 tablespoons all-purpose flour (or GF all-purpose flour)
- 1 cup whole milk (for more creaminess can use half and half; for less calories can use 2% milk)
- 1 1/2 cups grated Cheddar cheese (orange or white)
- Optional: ¼ cup American cheese (to recreate fast-food style flavor)
- Salt, pepper, garlic powder, and optional cayenne or smoked paprika
Step-by-step method
- Melt the butter in a medium sauce pan over medium heat. Melt: In a medium-sized saucepan, add the unsalted butter.
- Once it's melted add the flour and whisk it continually until it's dissolved. Then continue to whisk it for one minute. This will cook off the flour flavor.
- Slowly pour in the milk, whisking continually to prevent lumps. Increase the heat to medium-high and continue whisking until the mixture comes to a low simmer (do not boil).
- Continue to whisk until the mixture has thickened. Avoid letting the milk boil or it can curdle, leading to a grainy texture.
- Add the cheese (both cheddar and American) and whisk until they are melted and mixture is thick and smooth. Add more salt and pepper to taste.
- Avoid letting the mixture boil after the cheese has been added. When you’re heating the milk, keep it to a very low simmer where it’s just barely bubbling.

How to prevent and fix common problems
- How to Prevent Clumps! Cheese gets clumpy or stringy if overheated.
- Too thick? Add a splash of milk to smooth it out.
- If you do accidentally boil your sauce and it becomes grainy, you can mitigate this to some extent by running the sauce through a fine mesh sieve.
- How do you make cheese sauce stay melted? Keep it warm, it thickens as it cools.
- To Reheat: Microwave for 30 seconds, then stir and repeat until it is heated through. Reheat it slowly in the saucepan over low heat, stirring frequently.
Variations and flavor boosts
If you want an even richer, creamier cheese sauce you can use half and half. For a smoky flavor element you can also add a pinch of smoked paprika. To “spice it up” you could add hot sauce, smoked paprika, garlic, onions, crumbled bacon, etc.
Cheese options
- Cheddar Cheese: As with the whole milk, I recommend using full-fat Cheddar cheese.
- Like a strong, robust cheese sauce? Use mature Cheddar. Prefer it more subtle? Use mild or medium. Want a white cheese sauce? Use white Cheddar.
- Although this recipe is called Cheddar cheese sauce, you can use other cheese varieties such as gouda, Monterey jack or pepper jack.
Serving suggestions
